For the sheets, beat the egg whites with a pinch of salt, gradually add the sugar and continue beating until completely dissolved and a strong meringue results.

Add walnuts and starch in 2-3 portions and mix lightly with a wooden spoon or spatula until well incorporated.

The composition is divided into two parts. Put half of the composites in a 20x30 cm tray lined with baking paper and level well.

Place in the preheated oven at 150 degrees C and bake on low heat. Bake for about 45 minutes until lightly browned on top. Remove from the oven, allow to cool and then remove the baking paper.

Do the same with the second sheet of cake.

For the cream, put on the fire 400 ml of milk with sugar, the rest of the milk mix well with the starch.

When the milk boils, add the starch and mix continuously until the composition thickens. Then set aside and add the vanilla extract and leave to cool. After the cream has cooled, add the soft butter (rubbed beforehand) and mix until well incorporated and a buttery cream is obtained.

Cherry jelly: cherries, 200 ml of water and sugar are put on the fire. The remaining 50 ml of water is mixed with the starch and added over the composition on the fire when it boils. Leave it on the fire until it thickens.

Gelatin is hydrated with 2 tablespoons of cold water.

After the jelly has cooled to room temperature, add gelatin to the composition and mix until dissolved.

Cake assembly:

Put half of the cream on the first sheet and then put it in the fridge for about 30 minutes.

After the cream hardens, pour the warm cherry jelly on top of the cream, let it cool and after the jelly has hardened, put the other half of the cream, then the second sheet of meringue.

Leave the cake in the fridge for about an hour.

For the icing, break the white chocolate into small pieces together with the whipping cream and put the oil on the fire and mix until smooth. Pour the icing over the cake.

I also melted dark chocolate and decorated half the cake, making a grate.

I decorated it with fresh cherries, glazed with a little dark chocolate.
